1 onion, finely chopped
¼ tsp. poultry seasoning
1 tsp. salt
½ tsp. pepper
1 tsp. paprika

Stuffing:
1 ½ cups banana, sliced
¾ tsp. salt
1 cup walnuts, chopped
½ cup raisins
2 ¼ cups soft breadcrumbs, firmly packed

Prepare chicken for roasting by sprinking with spices. Combine stuffing ingrients and stuff in cavity of chicken.

Put in greased uncovered roast pan in oven at 350° for approximately 1 1/2 hours or until done.

Or you can remember that wonderful vacation your family enjoyed in the Caribbean. Perhaps your husband was crazy about that spicy island food. If you looked at a cookbook like “20 Best Jamaican Recipes” you may find one of his favorites in there that you could surprise him with for a special occasion. Did he particularly like the jerk chicken?

Here is the recipe for you to try:

Jerk Chicken:

6-8 chicken pieces (thigh & drumsticks)
¼ cup cooking oil
4 cloves garlic
1 small onion
1 TBSP. allspice
½ tsp. nutmeg
½ tsp. cinnamon
2 TBSP. thyme
1 Scotch Bonnet pepper
3 TBSP. salt
2 TBSP. black pepper
1 small tomato
1 TBSP. cooking oil

Wash chicken pieces and set aside.

Combine remaining ingredients in blender (except ¼ cup cooking oil) and blend until combined.

Place chicken in large freezer bag and add blended spices. Squish together to coat chicken with marinade. Let marinate in refrigerator overnight (or for at least 4 hours).

Remove chicken from marinade and pat with paper towel to remove excess marinade.
